These little treats are full of spiced flavour and are perfect little morsels for afternoon tea with a big mug of tea and a warm spot in the sunshine to recharge for the evening.
Cardamon + Orange Cookies
3 tablespoons butter
3 tablespoons rice malt or maple syrup
rind of 1 orange, finely grated
2 cups almond meal
1/4 teaspoon baking powder
1/4 teaspoon vanilla powder
1/2 teaspoon cardamon powder
1 egg, beaten
Preheat oven to 180c and line a baking tray with baking paper. In a small saucepan melt butter and syrup together over low heat, remove from heat and add the orange rind. Set aside to infuse and cool.
In a mixing bowl place the almond meal, baking powder, vanilla powder and cardamon powder and mix well. To this add the beaten egg and butter mixture and stir to form a dough.
To make the cookies, roll about a tablespoon of the dough into a ball, place on the baking tray and press down with the back of a damp fork.
Bake in oven for 15 minutes until the cookies start to turn golden brown. Allow to cool before storing in an airtight container for a week.
